Sweet Potatoes infused with Asian Herbs

Ingredients
Sweet Potatoes infused with Asian Herbs:

Sweet potatoes, even size, clean and blanched 1.5 kg

Curry Leaves, chopped 30.0 g

Rampe, finely chopped 20.0 g

Garlic, minced 30.0 g

Curry powder, raw 10.0 g

Honey 50.0 ml

Black pepper, cracked 10.0 g

Olive oil 100.0 ml
Preparation

Sweet Potatoes infused with Asian Herbs:
- Preheat oven to 200°C.
- Make slits on the sweet potatoes without separating.
- Mix all remaining ingredients in the oil together.
- Place the sweet potatoes in a roasting pan and brush with the herb oil mixture.
- Make sure to brush well, inside the slits of the sweet potatoes.
- Roast the sweet potatoes till done and golden, basting with the remaining oil from time to time.
- Serve immediately after roasting with remaining roast glaze.
