1. Method:

    • Wash and dry the spinach. Pick off the stems and discard any bad leaves.
    • In a large saucepan, bring water to a boil over high heat. Add spinach, cover and reduce heat to a medium-high. Cook for 3 to 5 minutes, or until tender but still bright green. Drain and refresh.
    • Squeeze out excess water with your hands. Cut spinach into 2-inch lengths and place in a large bowl.
    • Slice the spring onions, reserve half of them, add the remaining ingredients and mix well. Garnish with reserved spring onions and serve at room temperature.
